Have you been trying to cut calories and been lamenting the lack of flavour? Here’s your solution. This Pakistani Mint Chutney is quick to make, super low calorie, packed with flavour and will add a welcome boost of taste and moistness to your meals. It goes well on falafel and is particularly good at adding moisture if you bake them instead of fry them. It works as a dressing on salad, chicken and even works as a marinade for meats. Try it on grilled lamb chops, it’s perfect match.
Make it with a mortar and pestle, you’ll get a better texture than if you blend it, you’ll also be surprised at how easily it breaks down compared to other herbs.
- 40 g fresh mint, leaves picked
- 1 green chilli, chpped
- 1 clove garlic, peeled
- ½ tsp salt
- ⅔ cup low fat yoghurt
- Put the mint, chilli and garlic in a mortar. Sprinkle over the salt and grind to a paste.
- Add the yoghurt and stir through.
- Keep refrigerated for up t three days.
