I used to dislike tofu intensely. Now I love it in its many incantations. Soft tofu has a beautiful silky texture and its water content makes it a refreshing choice in summer. This salad is perfect for sticky evenings when you want a light meal. It satisfies without feeling overly heavy. You’ll feel full even though it’s a very low calorie meal and as a bonus it’s protein rich. The salad comes together quickly and if you feel comfortable with skipping the blanching stage it’s even quicker to prepare. I do like to leave it in the fridge for a while to chill if possible.
Slender Chilled Tofu with Spring Onions

- Silken tofu, 400 grams
- 2 teaspoons sesame oil
- 1 teaspoon salt
- 1 teaspoon finely sliced spring
- 1 teaspoon black sesame seeds
- In a large pot over a medium heat very gently blanch the tofu. Place on a tilted board and allow to drain while it cools.
- Cut the tofu into 3cm cubes and spread the cubes over a serving dish. Drizzle with the sesame oil and sprinkle the salt over. Top with the spring onions and finally with a sprinkle of sesame seeds.
- Chill before serving.
